This past weekend we went to St. Jacob’s Farmers Market with my daughter and her boyfriend. It takes us about an hour to get to her neck of the woods so we usually make a few stops. First stop of course was coffee at BRCH Social in Waterloo. This place has a lovely monochrome decor and serves up delicious treats and wonderful coffee.
Next was the farmer’s market that boast indoor and outdoor vendors selling everything from meat and cheese to dog treats and clothing. In the winter months there are less outdoor vendors but surprisingly there was still many of them out there selling their goods. We stumbled on a booth that sold beautiful massive cuts of meat fit for a king and the plumpest Mennonite sausages I have ever seen! I knew they would be perfect for this dish so I picked up a dozen! Six hot Italian and 6 garlic for another meal.
Our last stop of the day was a little tour of the St. Jacob’s Village and a delicious flight of craft beer at Block Three Brewing Co. The building used to house a iron works many years ago but has been transformed into a lovely Brewery and Tap Room. We spent an hour there sipping our brews and playing Uno. We plan to return again and sped some time on their back patio once the weather gets warm again.
This is one of our families favourite pressure cooker meals. The prep only takes about 20 minutes then 15 minutes in the pressure cooker. The result is a moderately spicy dish perfectly paired with riced cauliflower, zucchini noodles or an assortment of roasted low carb veggies.
