Chili is a winter staple for many people. It is hearty, packed with flavour and super easy when you use your crock pot. Chili never goes to waste in my house as the left overs either go with me to work for lunch the next day or we use them in other meals. The only down side to chili is the beans. Beans are very high in carbs and yes I get that they are also packed with fiber and protein but if you are being extra careful with your carb consumption, beans will throw you off big time. An average serving of regular bean chili can pack 20g net carbs per serving and surprisingly only about 9g protein! For my family this is also a perfect alternative as my kids do not like beans but they really enjoy this!
Eat this delicious chili over riced cauliflower or even zucchini noodles with a generous sprinkling of parmesan, old cheddar and pepper. A perfect dish to bring to potlucks for Super Bowl parties or even BBQs in the summer! It only takes 15 minutes to prep then throw everything in a crock pot and forget about it.
There are 8g net carbs and 23g of protein in one serving! For this dish I used the convenience of Green Giants riced cauliflower and veggies which is great when you don’t feel like cooking or doing a lot of prep but making your own riced cauliflower is super easy and cheaper!
