  1. In a cast iron frying pan over medium heat, cook the chopped onion for 5-7 minutes. Add the garlic and cook for a minute or less, until fragrant.
  2. Add the ground beef (or chicken /turkey). Cook for 8-10 minutes, breaking apart, until browned.
  3. Transfer the meat mixture into a slow cooker and add remaining ingredients. Stir until combined.
  4. Cook for 6-8 hours on low or 3-4 hours on high. Serve hot over cauliflower rice and sprinkle with parmesan and old cheddar. Enjoy!
