Pumpkin Spice Almond Cake


I love the change of seasons in South Western Ontario. The air is crisp and the leaves put on a stunning display of colour. It is also the start of pumpkin spiced everything so I thought I would hop on the band wagon with this delicious Pumpkin Spice Almond Cake. Its low carb and simply delicious with a little dab of butter and a hot tea.

I added 1/4 cup of whey protein to add some protein so it makes a perfect post workout treat.

Instructions
  1. Preheat the oven to 300 F degrees.
  2. Grease a 8×4′ inch loaf pan well.
  3. In a bowl, mix the pumpkin, erthyritol (or sugar), baking powder, vanilla, salt and spices.
  4. Beat in the eggs and then add the almond flour.
  5. Pour into prepared loaf pan and bake for 60 minutes until firm and a toothpick comes out clean.
  6. Cool completely before slicing.
