  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Place shredded zucchini in a collander over the sink and sprinkle with a little sea salt . Let sit for 20 minutes to drain.
  3. Place the shredded zucchini into a cheese cloth. Squeeze to drain additional moisture.
  4. Melt the cheddar in a small pot over low heat until you can stir it. (You can do this in the microwave for 90 seconds if you prefer
  5. Meanwhile mix the remaining ingredients in a large bowl.
  6. Working quickly before the cheddar has the chance to cool, add the to the rest of the mixture. Shape into scones
  7. Bake for 15-20 minutes, until golden. Store in an air tight container for up to 3 days. Enjoy!!
