  1. Juice the limes into a medium bowl
  2. Add fish sauce, honey, sesame oil and crushed red pepper to the lime juice and whisk.
  3. Coarsely grate the carrots and chop green onions. Add to the lime mixture.
  4. Peel and mince the garlic and grate the ginger.
  5. Heat coconut oil in a pan over medium heat.
  6. Add garlic and ginger and saute for 15 to 30 seconds.
  7. Add ground chicken to pan and cook till it is no longer pink.
  8. To serve, spoon the chicken onto lettuce leaves, top with carrot slaw and top with avocado. Enjoy!!!
