This is a delicious one pot pressure cooker full of protein, fibre and only 5 Weight Watchers points. It is delicious on its own as a vegetarian/vegan option or a side dish to an oven roasted chicken breast.
Make sure you soak the mung beans for a few hours before cooking and rinse the basmati rice.
