Date squares are a yummy little treat perfect for family gatherings and parties. I received this recipe from one of my co-workers but modified it to bring down the carbs and pump up the protein and fibre. I replaced all the sugar with stevia, flour for coconut flour and the rolled oats with oat bran cereal which tastes like oatmeal, has more fiber and more nutrients. It also has a lower glycemic load/index than oatmeal, especially instant which tends to be higher GI than steel cut or other oatmeal products.
There are 20 net carbs in one square so I would suggest you go easy on them.

Ingredients
- 1 1/2 lb dates
- 1/4 tsp Stevia
- 1 tsp lemon
- 3 cups oat bran
- 2 cups coconut flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 1/2 tsp stevia
- 1 cup butter
Instructions
- Cover first 3 ingredients with water and boil until soft then mash.
- Mix together the last 6 ingreditents until crumbly.
- Layer 1/2 the topping on the bottom of a 9x12 baking pan then the mashed dates then the rest of the topping.
- Bake @ 350 30-40 minutes, until golden brown.
