Fried Beet and Mushroom Pita

beet pitaI was looking for something a little different for lunch and remembered I had some beets. They fried up nicely and I put them in the high protein pita. The result was a yummy packed pita high in protein and fibre.

Instructions

  1. Heat oil in a small frying pan and fry beets till tender. Add mushrooms and continue frying till golden brown.
  2. Spread mayo in 1/2 pita. Stuff beet mixture, fresh avocado and spinach leaves into pita. Enjoy!
