These pancakes are a remake of simple banana pancakes. If you have ever had zucchini bread you will know that it has a similar flavour to that of banana bread. Although banana’s are good for you they can be very high in sugar (16.6g) which makes a large banana very carb intensive at 31.1g!
I keep the skin on the zucchini for the added fibre and use a zero carb protein powder. You could also substitute the chocolate protein powder for vanilla or strawberry.
Try adding some semi-sweet chocolate nibs or blueberries for variety.
