I was looking for something a little different for lunch and remembered I had some beets. They fried up nicely and I put them in the high protein pita. The result was a yummy packed pita high in protein and fibre.
Fried Beet and Mushroom Pita Recipe

Ingredients
- 1/2 pita Haddad - High Protein
- 1 tsp olive oil
- 1/2 small beet julienne
- 1/3 cup muchrooms sliced
- 1/3 cup avocado chopped
- 1/2 cup spinach baby organic
- 1 tbsp mayo smoked
Instructions
- Heat oil in a small frying pan and fry beets till tender. Add mushrooms and continue frying till golden brown.
- Spread mayo in 1/2 pita. Stuff beet mixture, fresh avocado and spinach leaves into pita. Enjoy!
