About kimmy

Hello and thanks for popping by! My name is Kim and I love to cook low carbs recipes, desserts, salads and soups. I am always on the hunt for new recipes to make over. My husband Paul was diagnosed with slow onset Type 1 diabetes (LADA) over 5 years ago so we were forced to change the way we did things when it came to cooking. We have always been a healthy and active family. I play soccer, we both run 3-4 times per week and walk 5km most week days after dinner. Our kids play soccer and rugby and are no strangers to a healthy lifestyle. Spending time in the kitchen is always time well spent in my humble opinion and I love to share my cooking successes with you here. There may be hiccups along the way but we keep going and I hope our passion for food translates to your kitchen. Feel free to explore and remember to check us out on Face Book, Twitter, Instagram and Flickr.

Chicken and Strawberry Salad

This summer salad has everything one would need for a perfect summer salad. Plump red strawberries and BBQ'd chicken combined on the same plate. It's low carb, gluten-free, and packed with protein but its a perfect combination of sweet and savory. I used shredded cheddar but feel free to use [...]

How healthy are “Health Foods” anyway?

Just because it's found in the health food section, doesn't necessarily mean it's healthy. Between the mainstream media, the Food Pyramid, the thousands of health blogs out there, and the premise that you can just walk into a health food store and anything you pull off the shelves will be [...]

Rosemary Shortbread

Every summer we vacation up at the cottage in a little northern town called Thornbury. It is a sleepy little town but has some great pubs and spectacular coffee shops. Last summer I tried a Rosemary Shortbread cookie from our favourite coffee shop and was blown away as to how [...]

Flourless Peanut Butter & Chocolate Chip Cookies

It was quite an unsettled day today which was unfortunate for the organizers of the Burlington Sound of Music Festivals parade. Actually unsettled was an understatement. the skies opened up and it poured cats and dogs. In previous year the parade followed a route right smack in the middle of [...]
