Weight Watchers and diabetic friendly pasta soup with ground beef. It is high in fibre and 22.8g net carbs with only 6 Weight Watchers points.
To boost the protein I added nutritional yeast flakes and instead of using high carb regular white pasta I used low fat high protein Farro pasta. It is a little more expensive than regular pasta but in the long run a much better choice.

Ingredients
- 1 pound ground beef extra lean, browned and drained
- 1 cup onion chopped
- 1 cup carrots chopped
- 1/2 cup celery chopped
- 1 14 oz can diced tomatoes with juice
- 1 14 oz can kidney beans rinsed and drained
- 1 14 oz can white beans rinsed and drained
- 4 cups chicken broth
- 1 24 oz jar marinara tomato-basil or pasta sauce
- 1 1/2 tsp oregano
- 1/4 cup nutritional yeast
- 3/4 tsp hot pepper sauce (such as Tabasco)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/4 cups pasta fusilli farro pasta, cooked separately according to the package directions
- 1/4 cup parsley chopped fresh , optional
- Grated Parmesan optional for serving
