I make many curry dishes but this is the first green curry I have made and it was a hit! Its has subtle hints of coconut milk and spice. A co-worker a while back gave me the basics of making a good green curry and it was the best suggestion ever. The broth is full bodied and thick.
You can choose to make it with the chicken or add more vegetables like squash, mushrooms and bamboo shoots.

- 1 can coconut milk
- 1 package creamed coconut
- 1-2 tbsp green curry paste
- 2 tbsp agave nectar
- 2 tbsp fish sauce
- 2 lime leaves or lemon
- 1 cup sweet basil (purple), chopped
- 1 package vegetables frozen, mixed, or your choice of fresh
- 4 chicken breast boneless, skinless
