About kimmy

Hello and thanks for popping by! My name is Kim and I love to cook low carbs recipes, desserts, salads and soups. I am always on the hunt for new recipes to make over. My husband Paul was diagnosed with slow onset Type 1 diabetes (LADA) over 5 years ago so we were forced to change the way we did things when it came to cooking. We have always been a healthy and active family. I play soccer, we both run 3-4 times per week and walk 5km most week days after dinner. Our kids play soccer and rugby and are no strangers to a healthy lifestyle. Spending time in the kitchen is always time well spent in my humble opinion and I love to share my cooking successes with you here. There may be hiccups along the way but we keep going and I hope our passion for food translates to your kitchen. Feel free to explore and remember to check us out on Face Book, Twitter, Instagram and Flickr.

Simple Arugula Lunch Salad

Salads don't always have to be complicated and when you are at a bit of a loss for something different to have for lunch raid your crisper and throw something together. You might find you love the new flavour combination. For this salad I did just that. A little this [...]

BBQ Roasted Whole Chicken with Thyme and Power Black Herbal Salt

Our fantastic weekend started with a lively little event at one of our favourite stores in downtown Burlington, Ontario called Centro Garden. They are a store with an eclectic collection of fabrics, interesting kitchen items, lovely seasonal items and impressive indoor/outdoor garden ideas. Centro Garden hosts a farmers market every [...]

Easy Oven Meatballs

These little meatballs are virtually carb free but full of flavour. Experiment with different flavours by adding a combination of different herbs and spices or even cheese. I found these meatballs cooked better after being chilled for half an hour in the fridge. You can still bake them straight away [...]

Kale and Apple Smoothie

This has been a week of kale for our family. Kale in salads, kale in soups, and kale in this smoothie. The reason for this is the kale growing in my garden is massive. Little shop of horrors if you will. No to mention the kale is in fierce competition [...]

Curried Veggie Noodle and Chickpea Salad

We had a Post Canada Day party on July 4th (yes, Happy 4th to our neighbours south of the border) this year as the weather was less than optimal on July 1 and we were also up north visiting my mom for her 70th birthday which was July 2 (Happy [...]

Coconut Curry Lentil Soup

Ok, so we have already established that I love curry and I love soups. This soup is just another addition to my "MUST MAKE THIS AGAIN!" list. It is bursting at the seams with flavour and it makes enough that you are guaranteed to have lunch the next day. I [...]

Fast Fry Beef and Kale

This meal is so easy and so fast you wonder how it can satisfy your hungry crew. That is precisely the beauty of this dish. I used the kale from my kitchen garden and threw it in a little at a time so some bits were cooked but still a [...]

Low Carb Vegan Tacos with Leek and Avocado

Our family LOVES tacos but the tortilla wraps are very high in carbs and fat. To avoid a family mutiny I served regular tacos and cheese to the family but made myself these lovely fresh and low carb tacos. They took no extra time to prepare but I did have [...]

Scalloped Sweet Potatoes and Thyme

This scalloped potato recipe was an instant hit. I used Lancashire White Cheese instead of the cheeses listed and it was great. Use any cheese that strikes your fancy. A great opportunity to try something new. There are 19.6g net carbs, 6.1g protein and 9 Weight Watchers points per serving.

Mexican White Fish

For many of our family meals I make slight substitutions as I don't eat meat but I do eat fish. This meal was a treat as it was one for all and a quick one for all at that. 30 minutes from start to finish and you can adjust the [...]

High Protein Adzuki Bean Salad

A while ago we found a great line of bean pastas that are gluten-free, low carb, high protein and full of flavour. They have a nice selection of pasta types and bean varieties. The Adzuki Bean pasta is a lovely spaghetinni with only 11g net carbs, 20g protein and no [...]
